The pork hock pieces (not whole pork hocks) are carefully sorted and only those which meet their highest standards are selected. They are sliced, trimmed, and packed by hand. Enjoy this fully cooked pickled delicacy in three convenient 12-ounce jars. Refrigeration is not necessary before and after opening when the hocks are below the brine level. The red color of the pork hocks comes from two sources. First, they are a cured product that turns it from the natural color of pork, which is a light brown, to red.
